Around 650 small holder farmers in the Yirgacheffe region contributed to this beautiful coffee by delivering their ripe cherries to the privately held Aricha Wash Station. The coffee cherries were then sun-dried on raised African Drying beds for 12-15 days. In the daytime, the cherries were raked continuously in order to ensure a consistent drying process and covered from 12-3pm for protection from the hot sun. At night the cherries were covered again to protect them from rainfall.
