More than a century ago, Don Manuel Ariz left Galicia in Spain and arrived in Concepción de Ataco, in Ahuachapán. Señor Ariz had the brilliant idea to invest in small pieces of land nearby, beginning with 12 hectares of an excellent argilo-calcareous terroir which now makes up Mauricio Salaverria’s Villa Galicia farm. Today Mauricio continues the family tradition of specialty coffees with 6 small estates located at between 1300 and 1600m altitude. Mauricio has invested in an ecological processing mill inside Villa Galicia and is en expert in coffee preparation processes.
Located in the heart of the lovely town of Ataco, Finca Villa Galicia is a beautiful 12 hectare farm situated on light clay soil in an area known as “the flower road.” This farm, along with Finca Himalaya, took 7th place prize in the Cup Of Excellence of El Salvador in 2015. As with his other farms, Mauricio takes care to use trees to accentuate shade. A great complement to coffee culture, shady trees help protect the soil and reduce water stress on coffee trees during the dry season and encourage soil drainage. They are also a useful barrier to wind which is harmful to coffee trees. Mauricio dedicates his effort to being an eco-friendly farmer who looks after his workers, giving them higher salaries than elsewhere.
